Sophorolipids are a type of natural biosurfactant produced through fermentation by yeast, specifically Starmerella bombicola, using sugar and vegetable oil. These biosurfactants possess surfactant-like properties and are eco-friendly, biodegradable, and non-toxic. Sophorolipid production involves two stages of fermentation and physical extraction, and it can be used in various industries such as petroleum, medicine, environmental protection, food, cosmetics, home care, agriculture, and feed.

Applications and Benefits:
1) Anti-inflammatory
Sophorolipids have been found to have anti-inflammatory properties by regulating the production of various inflammatory molecules such as nitric oxide, adhesion molecules, and cytokines. They have also been shown to reduce mortality rates in rat models of septic peritonitis. Additionally, sophorolipids can reduce the production of IgE and inhibit asthma in mouse models.

2) Anti-tumor
Sophorolipids have anti-tumor activity and can induce the differentiation of human promyelocytic leukemia cells into monocytes. The acetyl group on the molecular structure of sophorolipids may be responsible for their anti-tumor activity. Sophorolipids have also been shown to be resistant to various cell lines and can induce tumor cell apoptosis. They are effective against pancreatic cancer cells, with the methyl ester derivative having the highest cell necrosis rate.

3) Antibacterial
Sophorolipids have antibacterial activity against various bacteria and fungi, including Bacillus subtilis, Staphylococcus xylosus, Streptococcus mutans, Propionibacterium ache, and Botrytiscineria. They destroy the bacterial cell membrane structure to exert their antibacterial effects.

4) Anti-virus
Sophorolipids have been found to have spermicidal effects and exhibit anti-HIV activity. The diacetylated ethyl ester derivative of sophorolipid has the highest spermicidal and anti-HIV activity, with low toxicity and high efficiency. Further chemical modifications can improve its efficacy.
