Neotame is a derivative of the dipeptide composed of the amino acids aspartic acid and phenylalanine, it also can be described as a composition of aspartame and 3,3-dimethyl butyraldehyde.

Neotame is an artificial sweetener with extreme sweetness, a sugary taste, and no off-flavors, commonly used as sugar substitute or sugar alternative.

Neotame is zero calories sweetener, it is sweet. 7,000 to 13,000 times sweeter than sugar, and 30 to 60 times as sweet as aspartame.
